Beef stew (in the Cook's Essentials pressure cooker)

 

For the 4 litre cooker:

800g braising steak, diced in chunks

 

2 onions, in chunks

½ small swede, peeled and chopped into chunks

1 turnip, peeled and in chunks

2 carrots peeled and in thick slices

OR

700g bag of prepared  casserole vegetables

 

Plus:

2tbsp flour

1 pt boiling water

2 beef stock cubes

½ pt red wine

1 tsp mixed herbs

For the 2.5 litre cooker:

450g braising steak, diced in chunks

 

1 onion, in chunks

¼ small swede, peeled and chopped into chunks

1 small turnip, peeled and in chunks

1 carrot peeled and in thick slices

OR

½ a 700g bag of prepared casserole vegetables

 

Plus:

1tbsp flour

300ml/½ pt boiling water

1 beef stock cube

150ml/¼ pt red wine

½ tsp mixed herbs

How to make it...

 

Heat the pressure cooker on ‘Sauté’ then add the olive oil.  Brown the beef in batches then remove.  Add the vegetables and brown in the same way.

 

Stir in flour then add wine, water, stock cube, herbs and seasoning and stir until smooth.  Add beef and stir in.

 

Close the pressure cooker and set valve to ‘Pressure’.  Select ‘Custom’ and set time to 40 minutes. Reduce pressure rapidly then serve.

 

If you prefer larger chunks of meat then cook for a further 5-10 minutes until tender.
