1 large courgette (diced)

1 potato (diced)

1 onion (diced)

1 large carrot (diced)

400g can chopped tomatoes

75g frozen petit pois

50g very small pasta shapes (Pastina or tiny macaroni)

75g French beans, cut into three

2 vegetable stock cubes

1 litre water

1tbsp tomato purée

Salt & pepper

 

Garnish:

4tsp pesto

2tbsp grated Parmesan cheese

 

 

French-style Pistou (vegetable) soup (in the Cook's Essentials Soup Maker)

How to make it...

 

Put all the ingredients into the Soup Maker and add enough water to reach the 'Max' level.  Stir together then select ‘Chunky’. Serve topped with a spoonful of pesto and a sprinkling of Parmesan in each bowl.
