Pea & mint soup (in the Cook's Essentials Soup Maker)

 

700g/ 1lb 8oz frozen peas

1 small onion, peeled & in quarters

1 large potato, in small dice

2 x veg stock cubes

Leaves from 4 sprigs mint

Salt & pepper

1litre (1 3/4 pts) cold water

 

Garnish:

Swirl double cream

1 slice Pancetta, fried until crisp then crumbled

Few sprigs mint

 

Put all ingredients into Soup Maker with enough water to reach the 'Max' level and select ‘Smooth’. Swirl with cream and garnish with a sprinkling of Pancetta and a sprig of mint to serve.
