Blue cheese & red pepper pesto crostini

 

1 Ciabatta or any small, crusty loaf

8tbsp roasted red pepper pesto

225g (8 oz) blue cheese

(eg St Agur, Stilton)

Few sprigs fresh basil

Salt and pepper

 

How to make it…

 

Thinly slice the bread and spread with the pesto, add a basil leaf then top each piece with a slice of the blue cheese. Line the plain shelf or a large baking tray with Bake-O-Glide or baking parchment and arrange the Crostini on this.

 

AGA: Cook in the Roasting Oven on the 1st set of runners for about 10 minutes until the cheese is beginning to bubble. Serve immediately.

 

Conventional oven: Bake at 200°C/Gas 5 for about 10 minutes until the cheese is beginning to bubble. Serve immediately.
